Brunch – Lunch – Munch

I have finally gotten away from the breakfast category! (kind of) Today’s idea is a pretty common one and pretty simple.

Stuffed peppers. They can be made for breakfast, lunch or dinner. They can even be made as a healthy snack to munch on when you are hitting that mid day lull at work. What is great about these guys is that they can be made the night before and reheated very easily.

The Brunch Pepper:  1. prep 2 eggs, 4 oz of turkey bacon/sausage, 2 oz of home fries, 1 cup of spinach. 2. cut the top of your pepper off, and clean out the inside. 3. Stuff the pepper with ingredients and top with some cheese, and cover in baking dish. Bake for 15-20 minutes on 350. For a healthier option hold off on the home fries and add in black beans or quinoa.

The Lunch Pepper: 1. Prep ground beef with taco seasoning, brown rice, corn and or black beans. 2. Repeat step 2 above. 3. Repeat step three above.

The Munch Pepper: pretty much either do options one or two, just cut the pepper in half and only add a small amount of each ingredient. So it is more of a snack than a meal. I do this one quite a bit so I have a picture of it. Till next week!
